Traditional food of Assam

Pork with Mustard 

green (Lai xaak):


A Traditional Assamese Dish of Assam.
-from Riju's Kitchen.



Recipe-

Ingredients:
 
Pork: 1/2kg

mustard green(lai xaak) 300gms

Ginger-garlic paste : 2tbsp

bay leaves : 2/3

chilies : 4

Onion : 2 large( chopped)

Cumin powder : ½ tsp

salt to taste and turmeric powder

Mustard oil : 2tbsp
 
Method-

Marinate the pork pieces with salt ,turmeric, ginger-garlic paste, chopped onions , bay leaves ,cumin powder and keep aside for 30 minutes.

Heat oil in a pan and put all the marinated pork mix into it .
Cook in low heat stirring occasionally with the lid on till the meat is half done
Add ½ cup water and cook again till the meat is almost done.
Now add the mustard green leaves breaking them coarsely .
Cook for another 10 minutes.
Then it ready to Serve.

Riju's recipe (Rijur Aakhol):
 
Assamese Traditional Recipe by Riju Das

Chicken with Banana shoot-"Posolare Kukurar mankharjuti."








Ingedient-
1. Chicken 1/2 kg
2. Banana shoot (posola) 1 pc 1/2m long
3. Onion-3 medium (Chopped)
4. Red chili 2
5.Garlic 1 tsn
6.Ginger-1 tsn
7. Cumin(jeera) powder
8. Red chili powder
9. Salt & turmeric
10. Sugar
11. Garam masala & pepper powder.

Method-
Chop banana shot(posola) and mix little salt, turmeric and chili powder. And keep aside.

Now take a pan and heat 3tblsn of oil.
Add red chilies fry till blackest red colored. Now add chopped onion and fry 2min. Dn add ginger-garlic paste.And fry till golden brown.

Add Chiken and fry dn add salt, turmeric 1 tsn, red chili powder1 tsn. dn fry till oil visible in sides. now seam the gas and cover the pan for 10min.

Now add chopped banana shoots and fry it for 5-6min. Dn cover the pan again.
Check the pan time by time.

When Chickens were half boiled add little hot water and cook for 2min.Dn cover the pan.

When its become dry cook for 5min. dn add water for is curry. Boil it till its proper thikness.

Finally add1/4tsn sugar, 1/2 tsn garam masala and 1/4tsn pepper. boil for 3min. Now its ready to serve.
